How do dyno numbers even make sense for a stock car?

I was watching a few car videos last night and kept seeing people argue over horsepower gains after mods, but what really confused me is how those numbers are even measured properly because every place seems to show slightly different results for the same type of car, I started looking into it a bit more and ended up on https:dynostarworkshop.com just out of curiosity after someone mentioned dyno testing in a local group, but I still can’t wrap my head around how consistent these readings are supposed to be when things like temperature, fuel quality, and even the setup of the machine can change the outcome, I’m driving a completely stock car so I’m wondering if putting it on a dyno is just for fun or if people actually learn something useful from it beyond just seeing a number on a screen, would be interesting to hear from someone who has done it without any modifications just to see what it shows.
